Aly's Famous Fish Stew

Welcome to my very first food post. I will spare you the blah blah blah’s and dive right on into the recipe.
Ingredients:
2 yellow onion
4 cloves of garlic
2 red bell peppers
4 big tomatoes
1 jalapeño
2 Lime
2 cans of coconut milk
1lb fish
1lb shrimp
Cilantro
Seasonings:
Salt
Pepper
Ginger powder
Garlic powder
Onion powder
Recipe:
Chop everything. Put it in a big pot & cook! Right? I don’t know how to write a recipe. Let’s try.
Okay…. Here goes nothing.
Chop the onions and cook them on low/medium heat with a bit of olive oil until translucent
Add in the garlic, cook till you can smell it and it smells yum
Add in the peppers
Add in the tomatoes and make sure to include all the juice from the cutting board
Season with whatever seasonings you feel like. I use ginger powder, garlic powder, onion powder and a little red pepper flakes.
sweat the veggies for 5-10 minutes, the liquid that comes out will be part of the broth
Add in the coconut milk & lime
Add in the shrimp & fish & cilantro. Cover with a lid and simmer on low for 20 minutes
EAT!
You will know it’s ready when the shrimp are pink and the fish is flakey.
NOTE: I will chop as the onion is going and continue to just chop along the way. Salt at each step. A little salt & pepper goes you go.
Serve with a baguette, roasted garlic and top with a little parmesan
If you are feeling feisty, I recommend experimenting by adding anything you damn well please. This is your day! This is your dinner! This is your fish stew!

You know I am not a food blogger cause the only photo I have, the soup is barely in frame. Also forgot napkins and Tim’s drink. Was just in a rush to get the shot so we could eat!
